Low Carb Dessert - Peanut Butter Cookies



Yes, low carb cookies made with no flour and using Splenda, very yummy!


Low Carb Peanut Butter Cookies

· 1 cup no sugar added peanut butter, creamy or crunchy
· 1 1/3 cups baking sugar replacement (I use Splenda)
· 1 egg
· 1 teaspoon vanilla extract

Directions:


Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the low carb peanut butter, 1 cup of the Splenda, the egg and vanilla and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork dipped in Splenda, press a crisscross design on each cookie. (At this point I added sugar free chocolate that I cut into small chunks to a couple of the cookies as seen in the picture.)
Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining Splenda. Cool slightly before removing from pan.
Tip: This batter can be sticky, use a little non stick spray on the spoon and your fingers.

  4. I guess I just have to do the carb math per cookie based on the peanut butter used. hmmm. Any suggestions on a low carb peanut butter brand. I usually just stay away from the stuff when I'm doing low carb dieting.

  5. Peter Pan has a 1/3 less sugar brand that is available at most stores but if you have a health food store nearby you can usally find a natural peanut butter with no added sugar. The low carb diet I am on does not require me to count carbs but since most of my readers do count carbs, I will be trying to get better about listing how many carbs are in each serving! Thanks for your comments!

    Smuckers natural peanut butter has 2 ingredients; peanuts and salt. I love it!
